Simon acquired his Bachelor of Laws with Honours from the University of Adelaide before being admitted as a solicitor in South Australia in 1994. Two years later, he was also admitted as a solicitor in NSW. He started practising in criminal law in 1999 when he joined Legal Aid NSW. He worked in a range of criminal law roles there before coming to the bar in 2012. He practices in all criminal jurisdictions in NSW - in the Local, District and Supreme Courts, as well as the Drug Court and the Court of Criminal Appeal.
